David, I lived in El Paso for (jeez, was it that long?). I went to Kermezaar (didn't have an artist wife then) and liked the show, as a customer. It's an indoor show in the fall, run by a local org. and charges admission. the people who are there are often there to buy. It's very crafty but totally original.
I am in Central Texas, and I can say that aside from the big shows in Dallas and Houston, perhaps Austin, it is difficult to find out much information. The only show I am familiar with in West Texas is the Lubbock show, and I have not done this one. I think there is a review on this site.
I have looked at the Festival Network Online site a few times, they have a huge listing of shows throughout Texas, but you have to pay to acess ratings, and I don't have a paid membership. A lot of the shows appear to be in small towns, and may be hobby-type craft more than fine art. I don't know your medium, but for me it seems to be true what they say on this site, that you have to try them to find your niche. I am new to the business, applied to my first show about a year ago, was really clueless, actually, still clueless, but I know I won't learn unless I jump in wholeheartedly. Somebody posted here that it takes about three years to post a profit, so I figure that I will give it three years and work my way through Texas, maybe Oklahoma or New Mexico.
I haven't had the cattle comment yet, but when I first joined, a member who is no longer on this site asked me if a particular show would have bbq. Still waiting for the cowboy snark :)
