I think our first regular two-day juried art festival was Pioneer Days in High Springs, FL in 2010.
What are the best things about art fairs

Best show ever and why
Possibly Isle of Eight Flags Shrimp Festival. They hold our record for greatest sales one year but can vary widely year-to-year (for consistent good sales, Melbourne is better). But Fernandina Beach takes their festival seriously with a parade, fireworks, other activities.
Worst show ever and why
Pumpkin Festival in Bradenton, FL. Let's just say it wasn't our niche.
