I've been preaching the value of open juries for the past ten years and try to attend at least one open jury or be a juror for a mock (image evaluation) jury each year. For Southwest Florida, contact Fort Myers (and Coconut Grove) and ask if you can attend the jury for next year.
Maybe Kip at the Red River Revel. Who runs the Covington art fair? Maybe they'd be open to an observer.
Sometimes some of the shows Skype their juries so you can watch from afar. Let's all watch for that and see if we can find out who is doing that this year.

Who would I contact for Louisiana?
First of all, it has to be a show that projects the images. I have a list of about forty shows:

I also have many articles reviewing juries and interviews with jurors:

Closest to Louisiana is probably Main Street Fort Worth.
