Gail - I know a few artists who use inventory software, print labels with bar codes. As each item sells they peal the barcode off and then at the end of the show they scan the bar codes and import them into Excel. So far I haven't found a SW program as robust as I would like so I'm sticking to Excel for now.
I wish I sold enough for this to be a problem! Every piece I make has it's own number. The 2nd necklace of 2012 would be N12-0002. I have a spread sheet listing each of my pieces with costs: materials, labor, wholesale & retail. I update the spread sheet on my computer after the show is over. So far, so good.
