How to secure commissions during an art sale

I just participated in my first outdoor art fair. I had numerous discussions with customers over possible portrait commissions. Can anyone give advice as to how to secure these projects during the show. I am following up on a few, but I feel I let numerous out the door. I have an other show at the end of the month and have made gift certificates for portrait purchases. Any other ideas?

Carry a book of example (8x10 print) portraits to show interested people. Have them facing a scan of the source print in the book. make sure the scan of the source print is no larger than 4x6.
